Sizzling might just be the best way to describe this past week, with the heat wave that has descended, rendering people across the country miserable and confined to air conditioned spaces whenever possible. Luckily, it only reached 106 degrees today in Phoenix, but this is a “dry heat,” of course. Commence rolling of the eyes. On days when turning on the oven is simply out of the question, and standing outside to cook on the grill seems equally torturous, I recommend a healthy and easy stir-fry (so long as your kitchen is air conditioned).
3 garlic cloves, minced
1 cup onion, sliced thinly
6 red skin potatoes, cubed
2 cups vegetable broth
1 red bell pepper, sliced
1 small head broccoli, sliced
2 cups green beans, with ends removed
1 zucchini squash, sliced
1 spaghetti squash, sliced
¼ cup and 2 tablespoons olive oil
1 tablespoon dried oregano
You will need two large skillets or frying pans for this recipe. Pour 1 tablespoon of olive oil into the first skillet and sauté the onion slices on low. Once translucent, add the minced garlic and continue to sauté for 1-2 minutes. Next, add the cubed potatoes and the vegetable broth. Add 1 tablespoon dried oregano. Cover and cook on medium for at least 10-15 minutes, occasionally stirring, until the potatoes have absorbed the vegetable broth and are soft.
While the potatoes are cooking, heat up the second pan with 1 tablespoon of olive oil. Begin adding the vegetables according to what will take the longest to cook, saving the squash and bell pepper for last, and cooking on medium. Pour ¼ cup of olive oil over all of the vegetables. Cover and cook for 10-15 minutes, occasionally stirring.
When the potatoes are fully cooked, add the vegetable mixture to the first skillet. Cover and cook for at least 5 more minutes, or until the vegetables are done.
A stir-fry can be customized to suit your own preferences, so feel free to substitute different types of potatoes or vegetables to my recipe. As you can see from the pictures, I make different substitutions depending on what I am in the mood for that day!
